Course Overview

This course is aimed at those who have already developed skills in cookery, but want to take them to the next level. You will learn how to prepare and cook complex dishes to a high standard, developing the techniques required to work in high-end restaurants. The college has its own restaurant, Taste, where you will have the opportunity to put your skills into practice, along with other eateries including The Lilypad Cafe. The college also hosts prestigious events such as the Chesterfield Food and Drink Awards and The Derbyshire Times Business Awards, where staff and students from the college serve high quality food for 250 guests. There are many other opportunities for students to hone their skills throughout the year through work experience placements and external events, which will prepare you for life in the hospitality industry.

Course Content

Modules on this course include: Develop Productive Working Relationships with Colleagues, Prepare Meats for Complex Dishes, Cook and Finish Complex Meat Dishes, Prepare and Cook Fresh Pasta Dishes, Maintain the Health, Hygiene, Safety and Security of the Working Environment

Entry Requirements

You will need to have successfully completed a Level 2 qualification in Professional Cookery or Hospitality Services or have relevant work experience in the industry working as a Chef de Partie.
